If you’re watching your sugar intake, you can easily reduce the amount of agave. And if you don’t have agave on hand, honey works well (though it’s not vegan). Maple syrup can be used, but it’s thinner, so you may need to add a few more oats or dates to help everything stick together.

Ingredients

  • 10 soft dates (if they’re a little stiff, soak in water for 10 minutes and pat dry)
  • 80 g oats (or roughly 1 level cup of rolled oats)
  • 3 Tbsp cashew butter
  • 3 Tbsp pumpkin purée (drain extra liquid if any)
  • 1 tsp pumpkin spice (or mix cinnamon, nutmeg, and ginger)
  • 2 Tbsp sunflower seeds
  • 1 Tbsp chia or flax seeds 
  • 2 Tbsp agave
  • 1 tsp vanilla extract
  • Crushed pecans (optional, for coating)

Directions

Blend all ingredients in a food processor until dough-like. Roll into balls, coat with crushed pecans, and chill until firm.

These energy balls will stay fresh for about 1 week in the refrigerator or up to 3 months in the freezer if stored properly.

Here’s how to store them:

  • In the fridge: Place the energy balls in an airtight container, separating layers with parchment paper to prevent sticking. Keep them chilled, and they’ll stay soft and ready to eat for up to 7 days.
  • In the freezer: For longer storage, freeze the balls on a baking sheet first (so they don’t stick together), then transfer them to a freezer-safe container or zip bag. They’ll keep for about 2–3 months.

When you’re ready to enjoy one, just thaw at room temperature for 10–15 minutes, or eat it slightly chilled for a firmer texture.
